A word from the cook
When I make the sponge, I find that one half can be split and filled to make 1 sponge cake. Good luck, Marg.

4 good size eggs at room temperature
3/4 cup Caster Sugar
1 cup Corn Flour
1 teaspoon Cream of Tartar
1/2 teaspoon Carb. Soda
1 teaspoon Vanilla Essence

  1. Grease and line 2 x 8″ (20cm) cake pans.
  2. Preheat oven to 180c or 160cFF.
  3. Separate eggs.  Beat egg whites with pinch of salt until soft peaks form. Gradually add sugar, beat until sugar is dissolved then add egg yolks and beat until mixture is smooth.
  4. Double sift dry ingredients, then add to mixture.
  5. Fold in with fork, then add vanilla essence.
  6. Divide into prepared pans.
  7. Bake in oven approx. 20 minutes or until sponge springs back when pressed with finger.
  8. When cool fill with whipped cream, and Ice with Passionfruit Icing.
