Pesto Pasta (soooo easy)

Pasta doesn't make you fat, How much pasta you eat makes you fat.

350 grams penne pasta
4 rashers rindless bacon, chopped
1 onion, finely chopped
1 teaspoon crushed garlic
1 punnet cherry tomatoes, halved
100 grams baby spinach leaves
1 cup grated parmesan
1/2 cup basic pesto

  1. Cook pasta in a large saucepan of boiling, salted water.  Drain and return to saucepan.
  2. Meanwhile heat a frying pan on high.  Fry bacon, onion and garlic for 5 mins until bacon is crispy and onion is tender.
  3. Toss bacon mixture, tomatoes, spinach and parmesan in with pasta.
  4. Optional – Add some roasted pinenuts or olives.
