Ham and Cheese Puffs

A word from the cook
Prepare Puffs up to several hours before baking. Bake only when ready to serve; they sink a little on cooling.

10 slices square sandwich ham
2 onions, finely chopped
30g butter
2 cups finely grated tasty cheese
10 eggs
2 x 200g cartons natural yoghurt
2 tblspns chopped parsley

  1. Using ham, line 10 greased ovenproof dishes of one-cup capacity.
  2. Saute onions in butter until tender, divide evenly into ham-lined dishes, sprinkle evenly with half the cheese.
  3. Beat eggs and yoghurt together, pour into dishes.
  4. Sprinkle with remaining combined cheese and parsley.
  5. Stand on oven tray, bake in moderate oven 30 minutes.
  6. Turn out immediately, invert onto serving plates.
