Egg and Bacon Rolls

Prepare and wrap several hours before cooking

10 round crisp bread rolls
10 spinach leaves, chopped
30g butter
2 onions, chopped
4 bacon rashers, diced
3 tblspns bbq sauce
10 eggs
1 cup grated cheddar cheese

  1. Cut slice from top of bread rolls and reserve.
  2. Scoop out inside of bread rolls leaving a thin shell.
  3. Drop spinach into pan of boiling water, boil 1 minute; drain.
  4. Saute spinach in hot butter for 1 minute; drain, divide spinach between bread rolls.
  5. Saute onions and bacon in pan until tender, stir in barbecue sauce, spoon over spinach.
  6. Break eggs into each bread roll, top with cheese and replace “lids”.
  7. Wrap bread rolls in aluminium foil, stand on tray, bake in moderate oven 15 minutes.
  8. Remove from oven, stand 5 minutes before removing foil.
