In America - National Zucchini day, August 8 is not to be confused with April 24; this is National Zucchini Bread Day!! Who would have thought...

375 grams zucchini
1 medium onion
3 rashers bacon
1 cup grated cheddar cheese
1 cup self raising flour
1/2 cup oil
5 eggs
salt and pepper

  1. Grate unpeeled zucchini.
  2. Finely chop onion and bacon.
  3. Combine zucchini, onion and bacon with cheese, sifted flour, oil and lightly beaten eggs.
  4. Season with salt and pepper.
  5. Pour into well greased dish.
  6. Bake at 180c for 30-40 mins.
  7. Serve with tossed salad.
  8. Variation – Add chopped spinach and substitute 1/2 of cheese for ricotta or fetta.
