Lemon Meringue Tart

I believe that if life gives you lemons, you should try to make lemonade..... Then try to find someone whose life gave them vodka and have a party.
1 cooked pastry case
2 egg yolks
2 dstspn butter
5 tbspns sugar
5 tbspns water
2 lemons (juice and rind)
1 dstspn arrowroot dissolved in 2 dstspns water
- Place filling mixture in a cooled pie shell.
- Beat 2 egg whites until stiff, add 3 dessertspoons caster sugar and place on top of filling.
- Brown lightly in moderate oven.
- Place all filling ingredients in a small saucepan, heat over low heat stirring until thickened.
