It's ok to be a bit daring with the Rum

125 grams butter
1 cup icing sugar
1/2 cup cocoa
2 tblspns rum
1 1/2 cups coconut
few drops vanilla
2 cups chopped mixed fruit
chocolate dollarettes

  1. Beat butter, sifted icing sugar and cocoa to a light cream adding a little rum (ha ha…) to moisten.
  2. Beat in remaining rum.
  3. Fold in coconut and vanilla.
  4. Blend in chopped fruit.
  5. Roll teaspoonfuls into balls.  Coat with chocolate dollarettes.
  6. Place on waxed paper and chill until firm.
  7. Store in airtight tin in cool place.
