Chicken and Cashew Nut Sandwiches

The odds of going to the shop for a loaf of bread and coming out with only a loaf of bread are three billion to one.

18 slices of square bread (either all multigrain or a mix of white, wholemeal and multigrain).
1 1/2 cups cooked and finely chopped chicken
1 stick celery finely chopped
1/3 cup raw cashew nuts finely chopped
1 1/2 tblspns tartar sauce
2 tblspns mayonnaise
Butter or margarine
Sweet chilli relish (optional)


Spread 6 slices of bread with butter (and chilli relish – optional) and 1/2 of chicken filling mixture.

Butter both sides of another 6 slices of bread and place on top of chicken on first 6 slices.

Place remaining chicken on top of second slices of bread.

Butter one side of remaining 6 slices of bread and place on top of sandwiches.

Sandwiches can be frozen at this point in foil.

Allow to thaw for 1 hour before cutting, preferably with electric knife for clean cuts.

Cut the crusts off sandwiches and then cut each sandwich into 6 rectangular pieces.


Chicken filling

Mix together finely chopped cooked chicken, finely chopped celery, raw cashew nuts chopped, 1 1/2 tblspns tartar sauce and 2 tblspns mayonnaise.
