Sometimes it's just easier to say yes to that extra piece of dessert because frankly it's exhausting to keep saying no.

250 gram butter
2/3 cup caster sugar
1/3 cup honey
1/3 cup cream
1/3 cup brandy
300 grams flaked almonds
150 grams unsalted shelled pistachios
100 grams dark or milk chocolate

  1. Preheat the oven to 200 degrees
  2. Line the base and sides of a 19 x 29cm lamington tray and grease well
  3. In a large saucepan melt the butter, then add the sugar, brandy, cream and honey
  4. Stir and bring to the boil
  5. Remove from heat, add the nuts and mix well
  6. Spread the mixture into the prepared tin and bake for 25 minutes or until the top is golden brown (Place a dish in the bottom of the oven to catch any overflowing liquid when cooking)
  7. Remove and cool
  8. Melt the chocolate in a bowl over gently simmering water
  9. Drizzle over the slice and refrigerate
  10. Cut into squares or rectangles to serve
  11. Store in refrigerator
